So since Planeswalker cards are considered a "player" how would combat resolve with this creature if it was attacking a Planeswalker unblocked? Would the Planeswalker take 1 loyalty? Would that Planeswalker "lose the game" and die and the player controlling it lives? Or would the player controlling him lose considering its basically a player controlled player card? Thanks

Planeswalkers can only be targeted like a player would be. Since the trigger on the Assassin Token specifically says "player" and not "planeswalker", a planeswalker would only lose 1 loyalty if it took damage from an Assassin Token. Hope this helps!
